Carlow's Red ale

I know this beer as O'Hara's in the states. You might know it as something else in Europe. It is the Red from Carlows Brewery in Ireland. I'm told that the grains are Pale, Crystal, Roasted Barley, and torrified wheat. I need to figure out the hops and yeast.
Also, I've never used torrified wheat. Any advice on how much to use and do I just put this in my standard mash?
Any help out there?

Use about .5lb of torr. wheat/cracked. The hops can be anything related to Fuggle, EKG, Wilamette, etc.
