Octoberfest Tasting

As is my normal process, I tried my first glass of the octoberfest today (I normally have a glass the first week after kegging, the second week after keggin, and so forth until I feel it's ready).

The flavor is good, but I hate the yeast I used. It left it with a bit of a tart fruity tast along with the nice caramel taste.

My question, I've never really used a low attenuation yeast. Will the yeast flavor blend and mellow with the aging process the same way as hopps? It's not that it's bad, but the flavors do clash a bit..

It may subside or blend some. After all, it is pretty green right now. That was the meaning of the clean finish yeast in the recipe. I try not to label specific yeasts, because different strokes for different folks, but I try to stick with the cleaner finishing ones. That's my preference though.
