I have a fermenter bucket, right in the www.beertools.com tutorial but it doesn't tell the usage of plastic hose on the lid is it for siphoning, or? thank you

Blow off?

Without seeing the bucket I would have to guess that is a blow off tube that would be put in a pail of water during fermentation to allow the co2 produced to escape.

head space

you cant blow off spent yeast in all buckets ive seen, you have several inches of head space, unless you can get the hose close to the wort (1/4 to 1/2) inch and the bucket builds pressure. it maynot blow off much any way. just wracking it into secondary 5,6,7 days after pitcking yeast, sould keep off yeast flavors out of you brew.
