just out of curiosity what kettle evaporation rate per hour do you use?

I use 1 gallon per hour. And that may not be totally accurate. But that's what seems to be the closest I can come up with.
I also think it's a bit dependent on your system.

That's probably about right. that comes in right around 8% I will start with that and go from there

I lose 1 gallon an hour from my 5 gallon pot on the electric stove when I do 3 gallon batches.

I lose 1.25 gallons an hour from my 8 gallon pot on a propane burner outside when I brew 5 gallon batches. I lost 1.5 gallons an hour the first couple times I used that system, until I learned to control the burner a bit better.

I use a Sanke keg for my boil kettle and run at about 15% per hour boil off rate.

Well, my normal rate has been 1 gallon/hour. There was one day last summer that was awful humid and it seemed to take forever to get the boil down to the correct volume. On the other hand....during the drier and less humid days, the evaporation rate seems to be slightly higher. But my average is 1 gallon/hr and that's what I use.

Here's a link to a site that has various calculators for homebrewers. Just scroll down the page to the calculators section. I've used the boil off calculator and it's spot on. The author (johnplctech) is an engineer that used to be pretty active on a few of the forums, but I haven't seen anything he's posted in quite a while.
