Hey Tom. I have lost a few good posts to the void too - its a real p*ss off. Wow, sounds like your are well on way. I was talking about 6 months ago to a pro craft brewer up here in BC and he said his batches took three weeks round trip. I was amazed because his beer is great, and it takes me close to two months for my beer to really reach its peak (although I often drink it sooner). I guess the key is the temp control that you describe. I assume that controlling the temp in optimal range prevents the development of undesirable compounds/flavours that require longer aging periods to purge from the beer. Makes sense. Thanks for the post.
