how long can a starter rest in fridge
I lost my window of opportunity to brew this weekend and will have to wait till sat. morning. i started a 1000 ml batch of WL810 SAN FRANCISCO LAGER YEAST
should hit this batch again w/ dme and spin it again from Thursday to Saturday OR will the first batch still be viable

The yeast will be good for a couple weeks, at least, in the fridge.
When you want to use it, just remeove it from the fridge, decant off most of the liqiud, resuspend the yeast, and pitch it cold.

Either way you will be fine
It takes a lot to have too much yeast especially when you are making a lager. If I were you, I would feed the yeast, aerate and grow more healthy yeast cells. As long as you have good sanitazation procedures, you will be fine.

It's not the same as a real lager, if you're making a standard Steam Beer, so you don't need the yeast count to be way up there like a beer fermented at 50
