A dumb question but I wanted to be sure anyway. using:

2.5 kg. American 2-row
0.28 kg. Crystal Malt 40
BillyBock
Imperial Stout
Imperial Stout

Yep...152F @ 60 min. is my default mash regimen--ends up not too dry, and not too sweet. Make sure you stir the mash well to even out the temperature and check it with a accurate thermometer.

You can check for conversion using the iodine test, or by simply tasting the wort out of the mash (it should taste sweet).
