how soon can I begin lagering?
I am living in a hot area, and have plenty of space in my refrigerator. How soon can I put my batch in the refrigerator (40 degrees)? Can I put it in when fermentation begins?

Temp Controller
I don't think it is a good idea. 40 degrees is too cold and will probably end your fermentation before it starts. A better temperature for primary fermentation is 50-55 degrees. If you want to lager in your fridge, invest in a temp controller that enables you to have the fridge at warmer temps. They run about $50 a piece but are one of the best investments if you are serious about lagering.
