Vessel Heat Capacity - Does this number represent how much temperature the mash vessel is going to remove from your stike water ?

How am I able to determine the correct number for my mash vessel ?

Create a Vessel for your Mash Tun in the equipment display, Edit that vessel, and follow the calibration procedure, which is described reasonably well on this page of the BeerToolsPro Wiki.

Yes, heat capacity represents the amount of heat that will be lost to the mash tun. The calibration will be most accurate around the calibration temperature and in an environment with an ambient temperature of 68
