Vessel Heat Capacity - Does this number represent how much temperature the mash vessel is going to remove from your stike water ?
How am I able to determine the correct number for my mash vessel ?

Create a Vessel for your Mash Tun in the equipment display, Edit that vessel, and follow the calibration procedure, which is described reasonably well on this page of the BeerToolsPro Wiki.
