Problems with initial gravity

I brewed a sweet stout that ended up having an initial gravity of 1.081 and i was aiming for 1.055-1.060. I pitched the wyeast last night and it is going okay (not a mass action) but it is ferminting. I read I can add boiled and cooled water to get the I.G. down. Is this correct How much do I need t...
